This year is going fast, fast, fast, but I feel like I’ve been really slowing down a lot personally to make sure I’m really enjoying everything. our trip from Europe last summer. My new computer is handling all of the photo editing everything like a champ 🙂 . These posts take a lot of time to put together, but the photo above is a sneak peak from our trip to the Vatican in Rome, Italy! It was so dang hot that day, but Devin waited in line while Selja and I grabbed gelato for all of us when we were in line for the few hours (I’m not joking) and that made it a lot better.

finally making my first Youtube video! I’ve been really intimidated about this for a while. I’m fairly confident that I am making this too hard because I keep starting over and over. I cleaned up our sun room so I can have a good space for it though and I’m excited to get more comfortable with video.

cooking tons of meals in my Instant Pot. I have only cooked two meals on my stove top since buying my IP (which is CRAZY), my fridge is completely stocked with healthy and yummy food, and I’m really just obsessed. I have lost count at how many things I have actually cooked in my IP now.

lots of self-help books. I go in phases and right now that’s where I am at. I was doing monthly linkups for books here, but I asked to co-host quarterly so I could really digest what I’m reading instead of feeling pressure. I feel like I’m learning a lot right now + I am going to start up my teaching license renewal classes up soon and I need some time for that.
Spending…
time tracking my macros and cooking new recipes. I’ve calorie tracked a lot since 2010, but where my calories come from matters a lot more post-hashimotos. I’ve been shocked to lose 6.2 pounds since June 28th doing a ketogenic diet. I took a day off of counting macros (but not calories) on 4th of July and no regrets. I’ve also been taking a small bite of my non-keto food when I feel cravings so I don’t feel crazy and because I don’t want my stomach to freak out when I do eat those foods again (example: I took a bite of rice and refried beans with my fajitas). I’ve been full on the time and I haven’t minded doing this one bit.
