I typically cook fast recipes because my husband’s job in Georgia meant he had really unpredictable evenings. However, with his new job, his job is a true 8-5 job. For the first time in our marriage, his time coming home is predictable and we can eat dinner together every night!
Of course, I thought I’d have dinner on the table every night when he came home which is honestly laughable since I have a newborn. I’m starting to get the hang of cooking again though and have been cooking during E’s morning naps.
I found the easiest way to cook frozen corn on the cob with a ton of flavor is in the crock pot with this recipe! For the main dish, I baked some chicken legs and made a salad.
Can I say that the meal was still finished when I thought it would be? Absolutely not, but hey, everyday is worth trying and we both have a great sense of humor and low expectations during this season of our lives.
