Out of all of the things we received at our wedding, I think we were most puzzled how to use this mini crock pot. Don’t get me wrong, I love crock pots. I regularly use our larger crock pot. However, I had never seen small crock pots used. We were inviting people over to our house and I realized that the small crock pot would be perfect for making dips!
I decided to mix together all of my favorite things that I love in a good dip… and this 5 ingredient slow cooker rotel dip recipe was born. I’ve since found that the mini crock pots are AMAZING for appetizers and meals for one.
5 ingredient slow cooker rotel dip
A delicious and easy to make chip dip you can take to a party and make quickly!
Ingredients
- 1 can of Rotel (tomatoes & green chilies)
- 1 can of chili with meat
- 1 can of sweet corn (drained)
- 8 oz of cream cheese
- 16 oz of Velvetta white queso cheese
Instructions
- Cut the Velveeta cheese and cream cheese into small squares
- Drain the corn
- Put the wet ingredients into the slow cooker
- Put the cheeses into the slower cooker on top
- Cook on low for two hours while stirring occasionally
- Serve fresh!

My husband and I got one of these little guys for Christmas on year and I put it away and didn’t mess with it forever- until one Superbowl Sunday! Ever since it has been my go-to for dips, caramel sauce (for apples), etc! I love it- and I’m def going to try this dip! It looks so Yummy!

omg we used to make this all the time and I miss it so much! My sister still does a similar version but I just stare longingly at it since I can’t eat cheese anymore haha

Oh sad!! When I am stressed, I become very sensitive to eggs and peanuts (like waking up at 3 AM with food poisoning symptoms). I’m really lucky that if I am not stressed out, I don’t react.
